Due to Windows Vista really being a memory eater, I would recommend Windows 7. If your graphics are sluggish on Windows 7, you could just switch to the classic theme. I would tell you Windows XP, but it has no support without doing a workaround, so try to use Windows 7. :D

I ran Server '08 R2 on a similarly-specced machine so I can vouch for Windows 7's performance.

However, if you're in a bind, Tiny7 is a thing.

Use windows POSready 2009, It uses the Windows Xp theme so it should be fast and It is still supported until June of this year!

Just use either Windows POSReady 2009 or Windows 7. Windows 8 and 10 aren't really that good for old computers, since they're too advanced.

Actually Windows Embedded POSReady2009 has extended support until April 9, 2019... Which is amazing though. :o

8 is faster in some cases on XP hardware but the only thing I've tested it on were AMD 64 processors with 4gb of ram so it might not be true for older XP machines. It's worth a shot.

It's actually supported until April of 2019. Plus, you could still have security updates from POSReady2009 on XP if you still have it on this day and age. Even Michael (mjd) did a video on that.
